5 /5 Adam Schilling: I had the Faroe Island Salmon—my second time this week because the first was so good—and it was outstanding. I ordered it medium with a light, flaky Maillard crisp, and the chef nailed it. The dish is incredibly well-balanced: quinoa, perfectly cooked artichoke hearts with the spiny bits thoughtfully removed, fresh greens, and a light but flavorful lemon-butter sauce.
If you’re a salmon lover like me, Wellington’s should be an Albany must-visit. A+
